The Ferox Family
Fabian Reis, Winemaker & Viticulturalist
Fabian Reis was born into a traditional vintner family in Stuttgart, Germany. He is the sixth generation winemaker and his family winemaking background dates back to 1893. He moved to Niagara on the Lake, Canada in 1995. He returned back to Germany for over 5 years to study his winemaking roots from 2006-2011 and attended one of Germany’s prestigious winemaking schools, working alongside wineries that are ranked Europe’s best.
Since returning to Niagara, Fabian decided to take a chance and leave the shadows of his long established winemaking customs, and set forth to produce his own style of wines alongside sommelier wife Stephanie. These premium wines will fiercely push the wine industry boundaries to the next level with wine quality and vineyard practices.

Stephanie Reis, Sommelier
Stephanie’s background lies in Sport & Event Marketing before becoming a certified sommelier. Having grown up in Niagara, she is passionate about the industry and making the experience an unforgettable one for all customers who walk through the door. Her expertise compliments Fabian’s winemaking, and she enjoys being part of all aspects of the winery, including looking after marketing, sales, and social media.

Cubby Sadoon, Assistant Winemaker
Cubby first attended Brock University for Medical Science; after completing his degree, he realized that while he enjoyed the research and scientific method of medicine, it lacked the creative and artistic outlet he craved.
While working at Inniskillin (thank you for inspiring Cubby), during his undergraduate studies, Cubby discovered the Wine Spirits & Education Trust, as well as International Sommeliers Guild, which combined his love for science and the art of wine. He promptly signed up for both programs, becoming a certified sommelier and diploma student. For several years after moving on from the medical field, Cubby explored small and large scale producers to apprentice and learn skills, knowledge and experiential wisdom, which he could amalgamate and thereby produce craft wines in the future. In spring of 2020, he joined the team at Ferox, working alongside a friend, winemaker and owner whom he met almost a decade ago, at another Niagara winery.
Today, as part of the winemaking team, Cubby is driven to produce honest and authentic wines, to showcase time and place that makes Ferox a unique stop in Niagara-on-the-Lake.

David Koabel, Operations Manager
David comes with an extensive background in the industry and has spent the last 12 years as one of the top hospitality consultants in Toronto. During his tenure in Toronto, he spent time working with some of the top operators in the city, including MLSE, Terroni, and the Fairmont groups. Originally from Niagara Falls, he returns home to bring his expertise to Ferox and has spearheaded our goals of reaching new heights.

Adriano Cappuzzello, Executive Chef
Born in Ragusa Sicily, Adriano came to Canada in 2016 in search of new experiences and a cultural change. Starting at the young age of 14, Adriano worked his way up in a one Michelin Star restaurant, moving on to a two Michelin starred restaurant by the age of 19, both in his home city. Since arriving in Canada, he has worked in the some of the finer places Ontario has to offer including, Langdon Hall Restaurant, Buca Toronto and Sofia Yorkville. Now, living in the bountiful region of Niagara, he would like to showcase an elevated experience using what Niagara’s terroir has to offer during its seasons and pairing it with Ferox’s honest and authentic wines.

Nicole Pisarenko, Events Coordinator
With over 15 years in the Hospitality Industry and a well-rounded knowledge of Food and Beverage operations, Nicole started off at George Brown College to pursue the Culinary Arts. She continued her studies in Italy, to learn local hospitality, food and wine and instead fell in love with the concept of sustainability and farm-to-table. After many years in the restaurant industry, Nicole decided to pivot and enter the luxury event market, where she can combine her love for food, wine, and design all into one place.
